Ingredients:
- 1 lb Shrimp (peeled and deveined)
- 3 slices Bacon (cut into lardons)
- 1 teaspoon fresh lemon juice
- ½ cup of thinly sliced green onions
- 2 garlic cloves (minced)
- 2 Tbsp fresh parsley (chopped)
- 1 Tbsp all-purpose flour
- ¼ cup dry Sherry
- ½ cup chicken stock
- 1 Tbsp Shore Thing Seafood Seasoning
- 4 Tbsp unsalted butter
- 1 cup stone-ground grits
- 3 cups water
- ½ cup heavy cream
- 1 ½ teaspoons course kosher or sea salt
Directions:
- In a heavy-bottomed pot, bring 3 cups water, ½ cup heavy cream, 1 ½ teaspoons salt, and 2 Tbsp unsalted butter to a rolling boil
- Add grits to pot and bring back to a boil
- Cover, reduce to low and cook for 25 minutes, stirring occasionally
- Cook bacon in a frying pan until crispy then set aside on a paper towel to drain
- Melt 2 Tbsp butter in the frying pan
- Mix butter with 1 Tbsp all-purpose flour
- Add ¼ cup dry Sherry to pan
- Add ½ cup chicken stock to pan
- Add Shore Thing Seafood Seasoning, minced garlic, lemon juice, sliced green onions, and cooked bacon to pan
- Place shrimp into pan, stir and cook until pink, but not rubbery
- Ladle over hot grits and enjoy!
