Shrimp and Grits

Ingredients:

  • 1 lb Shrimp (peeled and deveined)
  • 3 slices Bacon (cut into lardons)
  • 1 teaspoon fresh lemon juice
  • ½ cup of thinly sliced green onions
  • 2 garlic cloves (minced)
  • 2 Tbsp fresh parsley (chopped)
  • 1 Tbsp all-purpose flour
  • ¼ cup dry Sherry
  • ½ cup chicken stock
  • 1 Tbsp Shore Thing Seafood Seasoning
  • 4 Tbsp unsalted butter
  • 1 cup stone-ground grits
  • 3 cups water
  • ½ cup heavy cream
  • 1 ½ teaspoons course kosher or sea salt

Directions:

  1. In a heavy-bottomed pot, bring 3 cups water, ½ cup heavy cream, 1 ½ teaspoons salt, and 2 Tbsp unsalted butter to a rolling boil
  2. Add grits to pot and bring back to a boil
  3. Cover, reduce to low and cook for 25 minutes, stirring occasionally
  4. Cook bacon in a frying pan until crispy then set aside on a paper towel to drain
  5. Melt 2 Tbsp butter in the frying pan
  6. Mix butter with 1 Tbsp all-purpose flour
  7. Add ¼ cup dry Sherry to pan
  8. Add ½ cup chicken stock to pan
  9. Add Shore Thing Seafood Seasoning, minced garlic, lemon juice, sliced green onions, and cooked bacon to pan
  10. Place shrimp into pan, stir and cook until pink, but not rubbery
  11. Ladle over hot grits and enjoy!
